Turkey Trot

Thanksgiving morning, Hannah and I ran the Turkey Trot in AF.  Sarah, the sister between us, ditched us Wednesday night to hang out with her boyfriend so just the two of us ran. We finished right at 30 minutes so it wasn't a bad run. Thanks Dad for being a great cheerleader at the finish line.

Oh Christmas Tree

Thanksgiving Day, my dad, Evan, Hannah and I went up to Strawberry to cut down our Christmas trees.  The weather wasn't too cold, but there was a good two feet of snow on our hike. We hiked for about 45 minutes or so until we found the perfect tree. (Thanks Dad for being a trooper). A few of our adventures were getting the car stuck in the snow and my dad and Evan had to push us out, falling through the snow up to our waists in some parts, and watching Hannah try to cut down her "baby tree" to take home.  This is our 5th year doing this and it is so much fun.




Running the Y

What better way to celebrate reaching my goal to run 100 miles a month than to run to the top of the Y for mile 100. It was a rough run, and I am sure that I was running slower than a walk, but I did it and felt so good after. I only saw 4 other people on the trail because the weather was a bit cold, but I liked being *almost* alone up there.

Retirement

I am UNofficially retired! This is kind of old news, but I quit my job about 2 weeks ago to go back to school. We are both now full time students with graduation in less that 8 months.  Let the single digit count down begin.  On my last day of work, I went to lunch with all the girls from the office. We went and had Indian food at this place in Orem.


September Freezer Foods

I not only have been neglecting our blog, our freezer has also been slowly dwindling down to ice cream and shredded potatoes.  I spent all day last Saturday cooking and filling our freezer with dinners and sauces that should last us for the next month. I think now that summer is over, I will get back in the hang of things.  I made 10 complete dinners, 12 bags of red sauce (each about 1 1/2 cups), 5 bags of two-serving rice, some muffins and cookies, and some blanched vegetables. Below is my shopping list and some of the things that I made.






Spanish Fork Demolition Derby

Since we only do white-trash things with the Boulters, we might as well keep the tradition going and travel down to Spanish to see some cars wreck!  My fav was the pink car (of course).  Evan dressed the part in his AC/DC shirt. We saw a few cars get flipped, start on fire, and a few of the drivers fight.

4th of July

a.k.a. Cousin Camp!  4th July is Evan's absolute favorite holiday.  He loves everything that it stands for- he loves America, pride, fireworks.  This year, we had the annual Pack family Cousin Camp.  CC is where all of the siblings and their families get together for a weekend-o-fun.  We went to the sand dunes, played games, had a slip-n-slide, went to the parade and enjoyed being with family.

Lake Powell

I love the water!  We just spent a week in Lake Powell and it was awesome.  We went wake-boarding, -surfing, and -skating; hiking; went out on the wave runners; watch tons of movies; and hung out on the water.  I caught a fish!  Well actually, the wave runner caught the fish. Sadi and I went on a little ride and as we were parking the wave runner, a fish swam up next to our feet. It was so gross. Literally, the fish was flopping on my foot.

Law School

Just a little shout-out to Evan.  He is amazing!  He works so hard and I love him so much for it. He not only is an AMAZING student and husband, but he also works as a TA, mentor and a VP for a non-profit during the school year.  Currently he is working in Salt Lake at a law firm and LOVES IT!!! He is doing a ton of tax law, business start ups and wills/trusts. Looks like we will we setting up roots in Salt Lake when Ev graduates next April.

The best part (according to Evan) he will finally have more degrees than me!  He will graduate with his Masters in Accounting and his JD in Law.  Beats out my Accounting and Economics degrees!

Strawberry Days and Camping

You know it is summer in Utah when the rodeos come into town!  We went to the PG Strawberry Days this year with some friends. It was so much fun eating strawberries and cream and watching the rodeo.  

We also went camping that same weekend.  But... as usual we didn't take any pictures together.  But here is Evan setting up our tent.

CA Trip

 A few weeks ago, I went down to California to welcome home my little brother from his deployment.  It was so much fun to have all the siblings together!  We spent time at the beach, shopping, and Knott's Berry Farm.

If you have even been to Knott's you have seen the McD's water tower.  Watching Jordan climb this thing was so funny. It took him 4 seconds!

So Cal List

Since Devyn made her list for her trip home, I thought I would list out what I want to do so I don't sit all week everyone can be prepared to have fun!

*Going to the BEACH!!! Man I miss the water, sand everywhere for days, the smell

*Real mexican food. I will probably go to Los Molcajetes three times

*Hanging out with ALL my siblings since we haven't been together in a long, long time.

Tons of Produce!

Every few weeks I participate in a produce co-op.  This week they had tons of food.  I received apples, strawberries, grapefruit, bananas, honeydew, sweet potatoes, zucchini, cucumber, broccoli, asparagus, and daikon (asian radish). I am so excited to have fresh, organic produce!

Girls Weekend

Over the weekend I went to St George with Tiff and Cat- we needed to see the sun!  It was so much fun to have girl time and go shopping, eat and lay at the pool almost the entire time.  Friday night we received a random text from our husbands saying to go to a specific address at 7:45 and to not be late or ask any questions. They boys booked reservations for a massage!  I have the best husband ever!!!  Thanks girls for a fun weekend.

Conference Weekend

Evan took a break from studying for *almost* a weekend.  He took 2 hour breaks every 2 hours to watch conference with me. After Saturday night's session, we went with the Barnes, Taylors and Pyfers up to the Barnes' cabin. We ate to most delicious cookies that Whitney made and played games and talked for most of the night. Of course, the boys had their semi-annual bouncy ball/basketball game.  We had a lot of fun, and for the most part, the weather was nice.

NCWA Championships

My little sister, Sarah, wrestles for Southern Virginia University, and LOVES it! She is amazing! Over the weekend they had their championship tournament and I was able to watch her wrestle via web cam.  It was awesome to see her pin the other girl. Way to go little sister.

Evan's Birthday

Only one month and one day late!  Evan's birthday was last month and lucky him it landed on a Saturday so we had a weekend of celebrations. Friday night we went to dinner with a group of friends to Carrabbas. Even little Tate turned to look at the camera! Saturday we went to dinner just the two of us and watched a movie at the house.  Sunday we had more friends over for cake, ice cream and games.  Even though it is cold and freezing outside, I thought it would be a great idea to buy Evan a bunch of golf stuff. He still has not put it away because he is so excited to go when the snow melts...in another couple of months.

Insanity

Evan and I started Insanity on Monday.  May 8 is D-day!!!  I have heard that after week 2 you are use to the pain and can get back to normal life. Wish us luck...

So, funny story about buying the DVDs. We found a guy on KSL selling them brand new for a great deal.  I text him, and he said to meet him at his house at 5:30.  I call Evan right away (who wants to go to a strange guys house alone), and he agreed to come with me.  We walked up to the house right as another guy is walking down with his brand new P90X DVDs tucked nicely into his jacket to block from the rain. We knock on the door and have this simple conversation:  "Are you here for Insanity?", "Yes", we exchange the money and DVD and ran back to our car.

Skiing

Evan LOVES skiing!  He has be begging me to go since we were married. I HATE cold... so my answer has always been "see ya when you get home.  I am going shopping". I realized that he was never going to stop asking me to go, so I went; first time in over 7 years.  I think at one point it was below zero (and I only cried a few times) but it was still fun.  
 


New Years...

Yes it is Feb 27, but who doesn't want a recap of 2 months ago!  It is tradition to have the biggest, baddest bash ever for New Year's and this year did not let us down. The festivities included a massive game of dodge ball and the annual burning of the tree ceremony (thanks Tom and Gaylen for not ever watering your tree so we can always have a nice big fire).
